Orange and Walnut Cake (not only for Passover)
I love my Passover orange&walnut cake. As it is the end of season for oranges here in Europe, this is also a great way to make good use them.
Here is the recipe, give it a try!
✨200 gr sugar (or less)
✨600 gr oranges
✨100 gr walnuts (roughly chopped)
✨30 ml olive oil
✨70-100 gr matzo cake meal (if not Passover just substitute almond meal, quinoa flour or plain bread crumbs)
🍊Boil the oranges whole for about 45 minutes until they are soft. Cut them in half, let them cool. Take the pits out and mix it in the food processor. You'll get a delicious orange purée.
🍊Preheat the oven to 180°C.
🍊Beat the eggs with sugar. Add the orange purée, mix well. Add walnuts and the olive oil.
🍊Adjust the batter with some matzo cake meal.
🍊Put into a greased baking pan.
🍊Bake for 30-40 minutes.
