SEPHARDIC STYLE CUCUMBER SOUP TOURETO

Ingredients

· 2 medium sized cucumbers, with peels

· 4 slices of stale bread

· 2 cloves of garlic , minced

· 80 gr olive oil

· 80 gr fresh lemon juice

· 80 gr fresh mint leaves

· Salt, white pepper

· Garnish: 50 ml olive oil mixed with hot red pepper flakes

Preparation

Soak the bread in water until soft. Squeeze dry.

Put all the ingredients to a food processor and mix until they become a puree. Chill it in the refrigerator for 1-2 hours. Before service decorate with the hot olive oil and some fresh herbs.

​

You can serve it with a salad, aperitif or besides a savory pastry.
